Here’s a quick and easy recipe that’s sure to please…especially if you’re a fan of creole comfort food! This easy red beans and rice dish requires minimal ingredients and prep time and takes a total of 20 minutes start to finish. Tastes amazing, too!

1 {16oz.} package of smoked sausage, sliced
2 tbsp. olive oil
2 {10oz.} cans of Rotel
3 & 1/2 cups chicken broth
2 tsp. Creole seasoning {I used my favorite, Tony Chachere’s!!!!}
1 & 1/2 cups cooked rice
1 {15oz.} can light red kidney beans, rinsed & drained
1 {15oz.} can dark red kidney beans, rinsed & drained
Ingredients
1 (16 oz) package smoked sausage, sliced
2 TBSP olive oil
2 (10 oz) cans Rotel, original or mild
2 tsp. creole seasoning (I use Tony Chachere’s)
1.5 C. cooked riced
1 (15 oz) can light red kidney beans, rinsed and drained
1 (15 oz) can dark red kidney beans, rinsed and drained
Directions
- Slice sausage. In a large skillet, add 2 tablespoons of olive oil and then toss in the sausage. Cook over medium heat until browned and then drain.
- While the sausage is browning, cook your rice. I use boil-in-a bag to keep things simple.
- Drain sausage, return to pan, and add rotel. Simmer for 5-7 minutes.
- Drain and rinse beans and add to pan.
- Add rice and stir to combine.
- Add cajun seasoning, mix, and simmer on low heat for 10 minutes. Enjoy!
